So, this is my first attempt at making my own vegan cheesecake. To be totally honest, I’m a little underwhelmed. Although it looks pretty, I’m not impressed with the texture of the filling. It was also my first time making cashew cream cheese and using agar agar as a setting agent, so maybe I’ll give it another try if this quarantine continues. Otherwise, with the amount of work and ingredients that went into this creation, I’ll happily pay $8 for a frozen Daiya cheesecake when we can safely venture out into the world again 😁 They can’t all be winners, right? 🤷♀️🤷♀️
